(1) Matlab has a downsample command and a decimate command and they are different. (2) Sensor data is often collected such that it is low frequency and aliased. This means it has to be handled with statistics rather than signal processing. This may include some machine learning and pattern classification techniques. (3) The data showed on the graph appears to change more rapidly than once per second, so valuable information might be lost at 1 KHz. (4) It may be necessary to collect more data at the correct sampling rate to determine how the data at the 30 KHz rate compares to the data at the correct sampling rate.
