Guy Madison listed some potentially relevant studies, but there are many more, and it is not quite clear which of those are most relevant to your problem. For example, if your participants first need to find the beat each time it (or the music) changes, studies of beat finding will be relevant, which were not listed by Guy. If the movement is continuous, coupled oscillator models may be most relevant. There is probably no "average adaptation time", as this depends on many factors.
