Hi Daniele: Since low cost is important to you and maximum precision is probably not needed with children, I suggest you use MAX/MSP Runtime, which is a free download. Taps can be recorded by pressing a key on the keyboard. Then you only need someone to write a MAX program for you to play a metronome or music and to record and save the taps. I'd be happy to do that for you, as it is fairly trivial and I have been using similar programs for years.
