Matt, There is an old publication of mine: "Characteristics of Musical Signals", AES preprint no. 3914 (1994), in which I looked at skewness, among other statistical measures, for recorded audio. Contact me off-list if you'd like a copy. The difficulty in its being old is that this work was done before I was able to easily record audio to a computer, and thus it was very difficult to get large samples.
