FG-3329 and 3629 are essentially the same, except that the 3629 has leads already attached to it, which saves you the time of having to solder them to the miniature microphone. Regarding your question about the HRTF's how-to, we give some details in Grassi E, Tulsi J & Shamma SA (2003) Measurement of Head-Related Transfer Functions based on the Empirical Transfer Function Estimate, in Proc.9th Int. Conf. on Auditory Displays, Boston, MA, pp. 119-122, July 2003. And, of course there are many other researchers that give details on their HRTF measurements...example: V. R. Algazi, C. Avendano, D. Thompson (1999). “Dependence of subject and measurement position in binaural signal acquisition”, J. Audio Eng. Soc., 47, 937-947. but it's far from a complete how-to!
