Etymotic Research produces some of the best earphones. You will probably
want a model with easily replaceable or disposeable inserts. I am not
sure which  ER model provides this, but I think it was the ER-4.

We are looking for insert earphones to use during auditory ERP
experiments.  The earphones should block external sounds and should also
be electrically shielded.  Can any of you recommend earphones of this
type that would work well for ERP experiments? Thanks!
